New Nordic Cuisine in New York City
A one-day symposium on the New
Nordic Cuisine movement and its expressions and impact on the New York City
food culture will take place on the Columbia University campus on Saturday,
April 6, 2013.
The symposium brings together scholars, entrepreneurs, and artisans from the
Nordic countries and the local community. It will provide a forum for
discussing of a broad range of issues including local ingredients,
environmentally conscious food production and the aesthetics of food
consumption. Two separate sessions seek to illuminate these issues from an
academic and a business point of view. The first includes academic
presentations on topics such as the New Nordic food philosophy, the
(re)creation of the Nordic terroir and its ingredients, the theatrics of consumption
of food, interior design, and the branding of the Nordic globally. The second
session is reserved for talks and workshops by local entrepreneurs and artisans
inspired by the New Nordic Manifesto.
The symposium is organized by the Department for Germanic Languages and
Literatures at Columbia University and is made possible by the generous support
of the Coordinating Committee for Nordic Studies Abroad. It is free and open to
the public.
